The 100% Duroc Gran Reserva Shoulder is a shoulder of the highest quality with a cure of more than 15 months. This breed of pig comes from a cross breed between Old Duroc and Red Jersey and they have been fed various types of cereals. When sliced, its appearance is similar to Iberian shoulder due to its fine streaked. Its meat has a delicate flavor, little salty and a pleasant aroma. Its texture is homogeneous and not very fibrous.
High performance pieces, the ratio of ham to bone and fat is very good. The cane is fine and the infiltration of fat in the meat is abundant. As a result, the highest quality product is obtained. The best quality Duroc shoulder!
